Glaze此1 cup semisweet chocolate chips察3 tbsp hot strong coffee察1 tbsp brandyoptional察3 tbsp butter察softened
1 Preheat oven to 350F。 Grease and lightly flour two 8´inch round layer cake pans。 Line bottons of pans with circles of waxed paper。
2 For cake察in top of double bioler over simmering water察melting chocolate and butter察stirring frequently。 Remove from heat察let cool about 5 minutes。
3 In large bowl察blend remaining cake ingredients with electric mixer on medium speed。 Add cooled chocolate mixture察beat at medium speed 3 minutes。 Divide batter between prepared pans。
4 Bake 30 to 35 minutes or until tester inserted in centre es out clean。 Let cool in pans 10 minutes察then remove to racks。 Remove waxed paper circles。 Let cool pletely before filling and glazing。
5 For icing察in top of double boiler over simmering water察melt chocolate。 Remove from heat察let cool about 5 minutes。
6 In bowl察beat butter using electric mixer on medium speed until fluffy察about 2 minutes。 Gradually beat in sugar察alternating with cream and continue beating until sugar dissolves。 Beat in vanilla察then cooled chocolate。Icing should be of good spreading consistency。 If too thin察beat in more sugar察if too thick察beat in more cream。
7 Arrane one cake layer on serving plate察spread with about third of icing。 Place second cake layer on top。 Spread sides and top of cake with remaining icing。 Refrigerate until icing is firm察about 30 minutes。
8 For glaze察place small bowl over saucepan of simmering water。 Add chocolate chips and coffee察melt。 Remove from heat。 Stir in brandy察if using。 Gradually blend in butter until smooth。 Cool 2 to 3 minutes。 Spread glaze over top of cake察letting it dribble down sides。

Cake此1/2 cup butter察1 cup granulated sugar察6oz175gsemisweet chocolate察5 eggs察separated察1 cup ground hazelnuts察1/4 tsp salt
Topping此1 cup whipping cream察whipped察1tsp1tbsp icing sugar察1tsp1/3 cup granulated sugar察1 tsp hazelnut liqueur察4 cups mixed berries
1 Preheat oven to 350F。 Grease 9´inch springform pan。
2 For cake察in medium bowl over simmering water察melt butter sugar and chocolate。 Stir until smooth。 Remove from heat察cool。 Stir in egg yolks and hazelnuts。
3 In glass or stainless steel bowl using electric mixer on low察beat egg whites and salt until soft peaks form察about 2 minutes。 Increase speed to high until stiff peaks form察about 2 minutes。 Fold whites into chocolate mixture察a third at a time。
4 Pour into prepared pan。 Bake on middle rack 35 minutes or until tester es out clean。 Cool and turn out on to rack。
5 In large bowl察bine whipped cream察1 tsp icing sugar察1 tsp granulated sugar and liqueur。
6 In medium bowl察toss berries with 1/3 cup granulated sugar。
7 Sift 1 tbsp icing sugar over cake。
8 Serve from bowls of sugared berries and cream mixture。
Maple Pear Upside Down Cake
Topping此1/3 cup maple syrup察1/4 cup packed brown sugar察1/4 cup chopped察toasted pecans察3 bosc or bartlett pears察peeled察quartered察cored察cut into 1/4´inch slices。
Cake此1/2 cup butter察softened察3/4 cup packed brown sugar察2 eggs察1tbsp vanilla察1 1/2 cups all´purpose flour察1 tsp cardamom or cinnamon察1 tsp baking powder察1/2 tsp baking soda察Pinch salt察1/2 cup sour cream
1 Preheat oven to 350F。 Grease 9´inch springform pan。
2 For topping察in small saucepan over medium´high heat察heat maple syrup and sugar until mixture begins to bubble。 Boil gently 1 minute察stirring constantly。 Pour into prepared pan。 Sprinkle with pecans。
3 Arrange pears over maple mixture in concentric circles overlapping each other slightly。 Set aside。
4 For cake察in large bowl using electric mixer on medium speed察beat together butter and sugar until fluffy察3 to 5 minutes。 Add eggs察one at a time察beating after each addition。 Beat in vanilla。
5 In another bowl察bine flour察cardamom or cinnamon察baking powder察baking soda and salt。 Mix dry ingredients and sour cream into egg mixture alternately察third of flour mixture and half of sour cream at a time。
6 Scrape batter into pan over pears。 Smooth batter carefully without moving pears。
7 Bake about 45 minutes or until tester inserted in centre es out clean。 Let cool in pan on rack 20 minutes。 Invert cake pan on to serving plate察remove cake pan。 Scrape any maple glaze from lan on to cake。
